Pakarkkai/Bittergourd_Potato
Ingredients:
Bittergourd - 1 small size(chopped into small cubes)
potato boiled - 1 no (cut into cubes)
mustard seeds - 1/2 tsp
turmeric powder - 1/2 tsp
Chilli powder - 1 tbsp
tamarind juice - small lemon size
jaggery - A bit (option)
oil - 1 tbsp
Salt to taste
Method:
* Fry the bittergourd with little oil and Cook it with some water till it is soft.
* Heat pan, add oil and mustard seeds. When it splutters, add turmeric. Then keep it stove in low flame and add chilli powder.after few sec add cooked potatoes and bittergourd. Fry it for a while.
* And then Add tamarind juice, salt. Let it boil for 5 min.
* Once water is reduced,add jaggery and mix well.
