Coriander_Mint_Potato_Kuruma
Ingredients:
Potatoes - 2 nos (cubed and half boiled)
Onion (chopped) - 1 no
Ginger garlic paste - 1 tsp
Tomato - 1 no
bayleaves - 2 nos
cloves - 2 nos
cinnamon stick - 1 inch
Anise - 2
Fennel seeds - 1 tsp
Few curry leaves
Oil
Salt
To Grind:
Mint leaves - 1/4 cup
Coriander leaves - 1/4 cup
Green chillies - 5 nos
Coconut - 3 tbsp
Peppercorns - 10 nos
Method:
* Grind all the ingredients given under list 'to grind' everything as fine paste and keep it aside.
* Heat enough oil, fry the whole spices, fennel seeds,curry leaves, add immediately the chopped onions,ginger garlic paste and salt, sauté everything for few minutes until the raw smell goes away,
* Add now the chopped tomatoes,sauté for few minutes, finally add the grounded paste, stir in for few minutes.
* Add the half cooked potatoes and enough water. cook everything in medium flame until the veggies get cooked well.
