Manathakkali_Vatha_Kuzhambu


Ingredients:
Manathakkali vathal - 1 cup
Onion - 2 to 3 big chopped fine
Tomato - 2 to 3 chopped fine
Tamarind - lime size soak in hot water and extract thick pulp
Garlic - 12 pods
Fenugreek seeds - 1 tsp
Asafoetida (Perungayam) - 2 tbsp
Curry leaves - few
Chopped coriander leaves - 2 tbsp
Chilli powder - 1 tbsp
Sambar powder - 1 tbsp
coriander powder - 1 tbsp
vathal powder - 3 tbsp (option)
Turmeric powder - one pinch
Salt - to taste
Oil - 2 tbsp
Gingelly oil - 1 tbsp

To Grind:
coconut powder - 2 tbsp
Shallot - 1 no
Red chilli - 2 nos
Aniseed - 1 tsp
Cumin seeds - 1 tbsp

Grind it as a paste and keep it aside.

Method:
* Heat oil in a pan and add fenugreek seeds, once it golden color,add Asafoetida fry it for a while.Then add garlic and saute for 3 or 4 minutes or till it turn golden color.
* Then add Vathal and fry it well.
*Now add onions...fry till light brown next add tomatoes ...mash and fry till they are pulpy...
* Add all the powders( can substitute with your home made powders)....mix it until raw small is gone.
* Now add the tamraind pulp...add 2 & 1/2 cups of water...reduce flame and cook for 10 minutes.
* Now add that Grind paste and mix it well. Then close with lid and allow to cook for 10 more min or once the thick Gravy come add 1 tbsp of Gingelly oil. Then trun of the stove.


Note: Goes well with Rice. :)
