Egg Roast Kerala curry

Ingredients:

  • Eggs - 4, hard boil, peel and make small slits lengthwise
  • Onion - 3 large, sliced
  • Green chilies - 2, slit
  • Ginger garlic paste - 1 tsp
  • Tomato - 2 large, chopped
  • Red chili powder - 1/2 to 3/4 tsp
  • Black pepper power - 1/2 tsp
  • Coriander powder - 1 tsp
  • Garam masala powder - pinch
  • Sakthi egg masala - 2 tsp
  • Curry leaves - 1 sprig
  • Salt to taste
  • Oil - 2-3 tbspse

Method:

* Heat oil in a heavy bottomed vessel. Once it got add sliced onions and green chillies,cutty leaves and saute for 10 mins. Now add ginger garlic paste and saute until raw smell is gone.

* Now add Red chilli powder,Coriander powder,pepper powder,sakthi egg masala and salt. cook until raw smell is gone.

* Now add sliced tomatoes and saute for 5 mins. Add little water (1/4 cup) and close with lid. after 5 min add Boil egg, place lid and simmer for 8 mins.

* Remove lid, add garam masala  and cook it for 3 mins. Add fresh few of curry leaves. Serve it got it with appam,idiyappan or chapati.
