Apple_Thokku (Pickle)
Ingredients:
Green Apple - 2 nos
Red Chilli - 2 nos
Curry leaves - few
Mustard seeds - 1/2 tsp
Urad dal - 1 tsp
Fenugreek powder (lightly toast seeds & powder) - 1/2 tsp -
Red Chilli Powder (adjust to taste) - 1 tbsp
Turmeric powder - a pinch
Hing/Asafoetida - a pinch
Gingelly/Veg Oil - 2 tbsp
Salt to taste
Method:
* Heat sesame oil in a saute pan, toss in mustard seeds and once they begin to splutter add Urad dal, let it fry. Then add dried red chilli,Hhing, turmeric. mix it 5 sec.
* Then add grated apple to the oil and cook until the moisture in the apple is cooked out, about 10 mins. Its done when the grated apple comes together as one mass and oil starts to separate and collect around the corners.
* Add fenugreek powder, Let it cook for 1 min. Now add red chili powder and mix well.Cook until raw smell is gone.
* Once cooled store in a dry airtight container and refrigerate.
Note: It goes with Rice,Chapathi and Dosa/Idly.
