Ingredients:
Wheat flour - 1 cup
Sugar - 3/4 cups
Milk - 1/4 to /12 cup
Eggs - 2 nos
Baking powder - 2 tsp
Vegetable oil - 1/4 cup
Melted Butter - 1 tbsp
salt - a pinch
Brown sugar - 4 tbsp
Pineapple - 4 round slices & 1/4 cup cubed
Method:
* Add melted butter in square oven safe pan . Sprinkle brown sugar evenly over melted butter. Arrange pineapple slices over brown sugar. Place cherry in center of each pineapple slices.
* In medium bowl, beat egg and sugar together.Then add baking powder, salt,oil and butter mix it well. Then add flour and mix with electric mixer on low speed 30 seconds, scraping bowl constantly or by spoon.. Beat on high speed 3 minutes, scraping bowl occasionally. Pour milk over the cake mix and beat it well.Now add pineapple cubes and just mix it.
* Now pour batter over pineapple and cherries.
* Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake a few minutes so brown sugar mixture can drizzle over cake; remove pan. Serve warm. Store cake loosely covered.
