Perichampazhalam/date fruit_Kuzhambu

Dates provide several essential nutrients such as calcium, fiber, amino acids, sulfur, iron, manganese, magnesium, phosphorous, copper, potassium and fats to the body. They are wonderful sources of dietary fiber and are rich in vitamins A1, B1, B2, B3 and B5.


Ingredients:
small Onions(medium) - 20 nos
Tomato(medium) - 3 nos
Garlic pods - 10 nos
cumin seeds - 1 tsp
Mustard seeds - 1 tsp
fenugreek seeds - 1 tsp
Turmeric powder - 1 tsp
Chilli powder - 2 tbsp
Coriander powder - 3/4 tbsp
Tamarind - Lemon size

To Grind:
Date fruits - 8 nos
cashew nuts - 10 nos
G.chilli - 3 nos
Coconut - 2 tbsp
Coriander leaves - 1 small cup


Method:
* Soak the tamarind in hot water and extract thick pulp and keep it aside.
* Just take it out the onions outside skin. Leave some skins, It will give nice taste. USe Garlic pods with skin.
* In small pan add little oil, once it got fry chilli until it become white skin, Then add Date fruits,cashew nuts ,Coconut - 2 tbsp and coriander leaves. Just fry it 1 or 2 min. No need to fry those things well. Make it cool and Grind it as a paste. Keep it aside.
* In a pan heat oil and add mustard seeds, let it pops up. Then add fenugreek seeds and cumin seeds.
* Then add onions and galic pods and fry it well.
* Once the garlic and onion trun golden,add tomato (add little salt now)and fry it well.
* Then add Coriander powder and Turmeric powder. Fry (low flame) until raw smell is gone.
* Then add Chilli powder, fry it for a while.
* Now add Tamarind water and bring it to boil. (If u need add little more water. Once we add those paste, Gravy will become thick). Add salt to taste.
* Now add that paste and let it boil. Add Curry leaves and coriander leaves.
* Serve it hot.
