Aviyal



Ingredients:
Yam sliced thinly into 11/2" length pieces - 1cup
Cucumber sliced lengthy into 11/2" thick pieces - 1cup
Snake gourd sliced into 11/2" length pieces - 1cup
Carrot sliced into into 11/2" length pieces - 1/4cup
Long runner-beans sliced into 11/2" length pieces - 1/2cup
Drumstick cut into 2" length pieces - 2nos
Raw bananas sliced into 11/2" length pieces - 1no
Mango pieces for sour
Turmeric powder 1/2tsp
Salt to taste
Grated coconut 2tbsp
Green chillies 5nos
Cumin seeds 1/2tsp
Curry leaves 2sprigs
Raw rice - little

Method:
* Boil the vegetables in sufficient water (do not add more water. just add water till the veges are fully immersed.Remove the vegetables from the middle and put sliced bananas and mango pieces and cover it with the other vegetables.Add salt when the veges are half done - if you add at the very beginning, vege will take longer time to cook) until the vege is done.
* While it is cooking, Grind 2 tbsp of grated coconut, 5 green chilly, 1/2 tsp raw rice, 1/4 tsp of cumin seeds, 3 curry leaves into a smooth paste.
* Once the vege is done, do not drain the excess water, add this coconut paste to the vegetable and let it come to a boil (may table abt 3 to 4 mins.
* Take it out from stove and then add few more curry leaves.
Serve it hot.
