Ulundhu_Bonda



Ingredients:
Black gram, skinless (urad dal) - 1 cup
Rice flour - 1 tbsp
Onion - 1 no
Green chilli - 3 nos
Mint leaves - 10 nos (cut as small)
Coriander leaves - 1 cup
Salt to taste
Asafoetida - 1 tsp
Curry leaves - 8-10 nos
Crushed black peppercorns - 1 tspn (option)
Oil to fry

method:
* Wash and soak urad dal for six hours OR over night.
* Drain all the water.Grind into a fine paste. Do not add water while grinding. (if you really need sprinkle little water).
* Transfer to the batter into a deep bowl.
* Beat this mixture with hand for 2 min. This will incorporate air and make the batter light.
* Then add salt, rice flour,Onion (cut as small peices), mint and Coriander leaves,asafoetida, curry leaves,Green chilli (cut as small rounds and crushed peppercorns to the batter and mix well.
* Pick and hold lemon size batter. Immediately drop carefully into hot oil.Use your thumb to push the batter ahead from your fingers.
* Deep fry this in medium hot oil until golden brown and crisp.
