Kaththirikkai_Kuzhambu (Brinjal Curry)
Ingredients:
Small kaththirika (Brinjal) - 5 nos
Onion - 1 nos
Tomato - 1 no
Tamarind - lemon size
Chilli Powder - 2 tbsp
Turmaric - 1/2 tsp
Coriander powder - 1 tbsp
Vatha kulambu masala - 2 tbsp
Fenugreek seeds - 1/2 tsp
Sesame Oil - 1 tsp
To Grind:
Small onion (shallots) - 4 nos
Roasted Peanuts - 1/4
Garlic -2 cloves
coriander seeds - 1 tbsp
Cumin seeds - 1 tbsp
Whole pepper - 10 nos
Coconut - 4 tbsp
Red chilli - 3 nos
Method:
* Slit the brinjals into four and keep it in a bowl of water.
* Heat the pan and fry it (without oil) for 5 min. Then add little oil fry 5 more min
and keep it aside.
* Fry all the above things with little oil and make it as fine powder, keep it aside.
* Soak tamarind in 1 1/2 cup water. Take out the tamarind juice and keep it aside.
* In pan add oil, once it heat add feenugreek seeds. Once it brown add onion and fry it for a while. Then add tomato and fry it well.
* Now add Chilli powder, coriander powder and Vathakuzhambu masala and fry it very well.
* Add fried brinjal into it and mix it well. The brinjal should mix with masala well (but do not break the brinjal)
* Then add Grind powder and Tamarind juice. Add Salt to taste. Let it boil.
* Then add little coconut powder and sesame oil on top of it.
Serve it hot.
