Ponnanganni_Keerai_Poriyal
Ingredients:
Pnnanganni keerai - 1 medium bunch, cleaned and cut into small pieces (only leaves)
Onion - 1 small, chopped
Garlic - 2 cloves, chopped finely
Salt to taste
For seasoning:
Oil - 1 tbsp
Red chillies - 5, or to taste, broken in half
Mustard seeds - 1/2 tsp
Urad dal - 1 tsp
Curry leaves - 1 sprig, torn in half (optional)
Method:
* Heat oil in pan and do the seasoning. Add onions and fry for 2-3 minutes.
* Add garlic and fry until garlic softens and onion is translucent.
* Add cut Ponnanganni keerai, squeezing well before adding to pan to make sure you're not adding excess water. While frying if u need add little water.
* Now, add salt and blast the heat as high as it will go on your stove! Stir frequently until the Pnnanganni keerai has wilted and there is no liquid left in the pan.
* At the last add little coconut.
