Brinjal_Thokku
Ingredients:
Brinjals - 7 to 8 nos
onions - 1 no (midium side)
G. chilli - 3 nos
Red chilli powder 1 tbsp
Turmeric powder - one pinch
mustard seeds - 1 tsp
Chana dal - 1 tsp
Urad dal - 1 tsp
Cooking oil - 1 tbsp
Salt to taste
Chopped coriander leaves
Coconut - 3 tbsp (Option)
Method:
* Wash and cut brinjal into small pieces.
* Chop onion and slit G.chilli.
* Heat the oil in a kadai / pan, add mustard seeds. When they start to crackle add chana dal, urad dal.
* When the dals turn brown, add chopped onions, Green chilli and cook until golden brown.
* Add red chilli powder, salt to taste, turmeric powder and mix well.
* Mix chopped brinjals.
* Cook on a low heat till the vegetables gets soft.
* If u want add coconut and add coriander leaves.
* Serve it got.
It will go with Rasam sadham and white rice well.
