Kozhi_Rasam (Chicken Soup)
Ingredients :
Chicken with bones (wash it with turmeric powder) - 10 pieces
onions (sambar vengayam) - chopped or big onion - 1/2 chopped
small tomatoes - 2 nos finely chopped
Garlic - 4 pods
Turmeric powder - 1 pinch
Cloves - 2 nos
Cinnamon stick - 1 inch
Bay leaves - 2 nos
Curry leaves - few
Coriander powder - 1 tbsp
Chilli Power - 1 tbsp
Salt to taste
Gingelly oil (nalla ennai) (option) - 1/2 tsp
To Grind :
Cumin seeds - 1 tsp
Black peppercorns - 8 nos
Red chilies - 1 nos
Garlic with skin- 4 pods
Fenner seeds (sombu) - 1 tsp
Curry leaves - few
Method:
*Wash the chicken nicely. Pressure cook the chicken along with the above all things (including ground paster) ,adding 5 cups of water. Add the turmeric powder and half of the salt needed. Wait for a whistle and then simmer the flame. Cook for another 10 minutes and switch off the stove.
* The rasam can be garnished with coriander leaves while serving.

TOMATO SHORBA INDIAN TOMATO SOUP
Ingredients:
Tomato - 5 nos
Green Chilli - 3 nos
Garlic - 5 pieces
Ginger - 2 pieces
Butter - 2 tbsp
Cumin seeds - 1 tsp
Pepper Corns - 5 nos
Coriander seeds (Crushed) - 1 tbsp
Coriander leaves - 1 bunch
Mint leaves - 5 nos (with stumps)
Curry leaves - few
Cinnamon sticks - 1" inches
Cardamom - 4 nos
Cloves - 3 nos
Bay leaves - 2 nos
Salt - for taste
Methods:
- Heat oil in a pan add whole garam masala, cumin seeds, pepper corns, coriander seeds, ginger, garlic, turmeric,
- Cook for a minute and add green chilly, roots and stems of curry leaves, coriander leaves, tomatoes. Let it fry for a while. Then add water, put the lid on simmer for 45 mins and an hour.
- Strain this and boil once again add sugar(option), salt,
- Heat butter in a pan add cumin seeds, thin slices of garlic,fry it for a while. Then add chopped coriander.
- Cook this in the butter, pour the tadaka in to the shorba.

Vegetable Soup
Ingredients:
Carrots - 2 nos
Beans - 10 nos
Zucchini or Cucumber - 1 nos
Chopped Cabbage - 1/2 cup
Celery - 2 sticks
black/red bean - 1 (soaked/cooked)
onion - 1/2
G.Chilli - 2 nos (option)
Salt to taste
Pepper to taste
For Broth:
Carrots - 2 nos
Onion - 1 no
Tomato - 3 (fully ripped -medium size)
Method:
Carrots - 2 nos
Beans - 10 nos
Zucchini or Cucumber - 1 nos
Chopped Cabbage - 1/2 cup
Celery - 2 sticks
black/red bean - 1 (soaked/cooked)
onion - 1/2
G.Chilli - 2 nos (option)
Salt to taste
Pepper to taste
For Broth:
Carrots - 2 nos
Onion - 1 no
Tomato - 3 (fully ripped -medium size)
Method:
* Chop two tomatoes, onion finely. Peel carrot and cut it into small cubes. Combine all of three and put it in a pressure cooker. Add three cups of water and pressure cook for two to three whistles. Use hand mixer/Mixie to grind the cooked carrot, tomato and onion pieces to a smooth puree. Keep aside.
* Cut the third tomato into medium size pieces. Cut Zucchini/Cucumber into bite size pieces. Chop the onion finely.
* Heat the oil in a kadai and add the chopped onion and fry till it become transparent. Add cabbage and saute for a minute. Then add cucumber and tomato pieces along with cooked black bean, salt and pepper powder and mix well. Add half cup water and bring to boil. When it starts boiling, add the carrot puree, stir well and allow to boil once again and remove.
Sprinkle little pepper and salt and serve with bread sticks.

Murunga Keerai Soup/Drumstick soup
Ingredients:
Moong dal - 1/4 cup
Water - 4-5 cups
Garlic - 7-8 gloves
Onion - 1/2 sliced
Tomato - 3-4 chopped
Drumstick leaves - 1 cup
Green chilli - 2 slit
Cinnamon stick - 1"
Cloves - 3 nos
Salt - to taste
To Grind:
Cumin seeds - 1 tsp
Pepper - 8 nos
Fennel seeds - 1 tsp
Curry leaves - few
Red chilli - 1 no
Method:
* cook 1/4 cup of broken split green gram dhal along 3-4 chopped tomatoes, 7-8 whole garlic(optional) with 4-5 cups of water in pressure cooker (for 4-5 whistles) till the dhal and tomatoes have mixed well. Grind 1tsp each of fennel, cumin, black pepper and keep aside.
* Heat oil in a pan, add 1' cinnamon, 3 cloves, sliced 1/2 medium onion, the drumstick leaves about a cup, 3-4 slit green chillies, the grinded powder,saute well. Add this to the green gram water,mix well let it cook for another 10min. Add enough water for soup consistency,then add salt. For extra flavor add 1tsp of ghee to it. Have it warm.

Black_Bean_Soup(Panera Bread soup)
Ingredients:
1 onion, finely chopped
2 garlic cloves, minced
2 celery ribs, finely chopped
1/4 large red bell pepper, finely chopped
2 small chicken bouillon cubes
1 -1 1/2 cup boiling water
2 (15 ounce) cans black beans, undrained
1/2 teaspoon salt
1/2 teaspoon cumin
1/2 lemon, juice of
1 1/2 tablespoons cornstarch
Method:
* In a pot, combine the first six ingredients; simmer for 10 minutes.
* Add half a can of beans, salt and cumin; cook for 5 minutes.
* Puree soup (I use an immersion blender which makes it easy to do it right in the pot).
* Add the rest of the beans to the soup.
* Combine the cornstarch with 1 1/2 tablespoons of water.
* Add the lemon and the cornstarch to the soup; cook until thickened.

Chicken_Clear_Soup
Ingredients:
1 (3 pound) whole chicken
2 carrots, halved
4 stalks celery, halved
1 large onion, halved
2 Parsnip
water to cover
salt and pepper to taste
Method:
* Put the chicken, 1 carrots, 2 celery and 1 onion and 1 Parsnip in a large soup pot and cover with cold water. cook on simmer, uncovered, until the chicken meat falls off of the bones (skim off foam every so often)(It will take around 2 two hours).
* Take everything out of the pot. Strain the broth. Pick the meat off of the bones and chop fresh carrots, celery, Parsnip and spring onion and into that broth. And cook it for 15 min more. Now add the cooked chicken peices. Serve it hot.

Green_Peas_Soup (Split GP)

Ingredients:
Carrot - 1 nos
Green pepper - 1 nos
Mushroom - 10 nos
Cabbage - 2 slices
beans - 5 nos
Spring onion - 1 bunch (with small onions)
Cooking Stock (veg) - 1 box
Garlic - 5 cloves
Pepper powder - 2 tbsp
Salt to taste
oil - 1 tsp
Method
* Cut all vegetables as small pieces and keep it aside, then
Smash Garlic cloves
* Add little oil in a vessel to fry garlic
* Add all the vegetables and fry it for 10 min in low flame
* Add little salt to taste and Cooking Stock then close it with lid
* Cook it for 30 min in low flame
* Add Pepper powder and serve it
Note: If you want to add chicken pieces, add 5 chicken pieces into it.
