Goat Fry



Ingredients: 
Baby Goat - 1 lb
Small Shallots - 15 nos (chopped)
Tomato - 1 no (chopped)
Ram naadu Round Red chilli - 10 nos
Fennel seed - 1 teaspoon
Smashed Ginger - 1"
Smashed  Garlic - 5 pods
Curry leaves - few
Coriander leaves - few
Coconut oil or butter - 2 tbsp
Salt to taste

Method: 
* In a cooker heat oil/butter, add fennel seeds. once it's pop...add ginger and fry it. Then add garlic, fry it for a while.Then add 5 Red chillies, fry it for few mins.Then add half of the chopped onion.Fry for 2 mins.
* Then add Cleaned goat & fry it for 3 mins.
* Now add chopped Tomato, mix well. Add salt & little water (not too much water). Close the cooker with lid and allow 8-10 whistles.
* In a Pan heat oil/butter, fry 5 red chillies, curry leaves & onions. Once It's turned brown, add cooked goat mixer.
* Keep the stove in high flame & fry it until well cook as shown in the picture.
* Add coriander leaves and serve hot with Rasam rice,white rice,pulao...etc.,

Mutton_Briyani

Ingredients:
Basmati rice -2 1/2 cups
Coconut water - 1 cup
Water - 2 1/2 cups
Milk - 1/2 cup
Oil - 2 Tbs
Ghee - 1 tbsp
Fennel seeds -1 Tsp
Cloves -3-4 nos
Cinnamon -1-2" long
Cardamom - 4-5 nos
Bay leaves - 2 nos.
Onion(sliced) - 1 no
Green chillies - 2 nos (slit).
Tomato -1 large no
G & G Paste - 1 tsp
Red chilli powder -1 tsp
Coriander powder - 2 tsp
Mint leaves - a handful
Cilantro - a handful
Salt to taste.

To marinate:
Mutton - 1 lb
Yogurt -2 Tbs
Lemon juice -  2 Tbs
Garam masala - 1 tsp
G & G Paste - 1 tsp
Green chilli - 2 nos
Salt, 1/2 tsp


Method:

 * Marinate the mutton with yogurt, lime juice, garam masala,green chilli,ginger garlic paste and salt for 30 minutes.
 * Wash and Soak Basmati rice in water for 30 minutes.
 * In a pressure cooker, heat oil & Ghee, add fennel seeds, cloves, cinnamon, cardamom and bay leaves and fry for 2 minutes then add the slit green chillies and onions and saute till onions turn translucent.
* Then add ginger garlic paste.Fry it for a while. Then add chilli powder, and coriander powder and 
* Then add mint leaves, cilantro and marinated mutton , 1 cup water.Then add pieces tomato and pressure cook upto 3  whistles or 20 mins then wait till the pressure releases and add the soaked basmati rice and add required salt and water and  pressure cook again.
* Let it cook 7 to 10 min in the low flame. Remove from the heat and wait till the pressure releases. Gently fluff it up and serve with raitha.

Mutton sukka varuval

Mutton Sukka Varuval

Ingredients:
Small Onion - 15 nos (sliced)
Tomato - 1 nos
Green chilli - 2
Fennel seeds - 1 tsp
Bay leaves - 2 nos
Cinnamon - 1/4 "
Cloves - 2
Chilli powder - 2 tsp
Coriander powder - 2 tsp
Pepper powder - 2 tsp
Mutton masala - 2 tsp
Turmeric powder - 1 tsp
Salt to taste
Curry leaves : 8 to 10

Fry the below things 1 by 1 and grind it as a paste:
Oil - 1tsp
Cumin seeds - 1 tsp
Fennel seeds - 1 tsp
Small onion - 10 to 15 nos
Garlic - 5 cloves
Ginger - 1"
Cinnamon Stick - small
Cloves - 2nos

To Marinate  and cook the mutton:

Mutton - 1 & 1/2 lbs (wash well with turmeric powder and water)
G & G paste - 1tsp
Lemon juice - 1 no
Turmeric powder - 1tsp
Salt to taste
Rice wash water - 2 cups

Method: 

* Wash the mutton well with turmeric powder and water. Marinate the mutton with G&G paste,Lemon juice and Salt (Marinate for 20mins)
* Add rice washed water into marinated mutton and cook it in the pressure cooker and cook it for 30 min or 5 - 7whistles. 
* In a Non sick pan heat oil and ghee. Once it hot add Fennel seeds,Cinnamon sticks,bay leaves and cloves. Then add onion, let it fry well.Now add tomato.Once it well done, add all the above powers (only powders - Not Ground paste). Fry it until raw smell is gone. Then add ground paste. let it fry until the color change or cook well.
* Now add Cook mutton with water. Let it fry in low flame. Once the water reduce and it comes like sukka take it out from the stove.
* Serve hot.

Mutton_Kuzhambu (Amma style)

Ingredients:

Mutton - 2 lbs
Onion(medium size) - 1 no
Green chilli - 2 nos
Curry leaves - few
Turmeric powder - 1/2 tsp
Mustard seeds - 1/2 tsp
Coriander leaves - 1/2 cup

To Grind:
Fry the below things one by one with little oil and grind it as a fine paste...
Shallots (Onion - 2) - 6 no (big3-small-3)
Tomato - 1/2 no (cut it as big pieces)
Red chilli - 2 no
Coconut - 1 tbsp
Coriander powder - 3 tbsp
Cinnamon stick - 1/2" (samll)
Cloves - 2 nos
Fennel seeds - 1/2 tsp
Poppy seeds - 1/2 tsp
Garlic - 4 cloves
Ginger - 1 "


Method:
* Clean the mutton well.
* Keep ready the above the ground paste.
* In a pressure cooker, heat oil and add mustard seeds. Then add turmeric powder,now add onion,Green chilli. fry it well.
* Then add Mutton and fry it for 10 mins. Once the mutton cook little, add above ground paste. Add enough water. Close with lid, let it 2 whistle.
* Then add coriander leaves. Serve it hot.

Mutton_Chukka

Ingredients:
Mutton-350 gms
Minced onion-Big(2) Small -30
Tomato-1
Ginger garlic paste-1 teaspoon
Corriander powder-3 teaspoon
Kuzhambu milagai Thool-3 teaspoons
Turmeric powder-1/2 teaspoon
Garlic Chopped-5 pods

To grind:
Grated cocunut-2 tablespoons(As little as you can grind in a mixie)
Kas kas or cashews- 1 teaspoon or 5
fennel seeds-1 teaspoon
To season
Cinamon-2 small pieces
Clove-2
Bay leaf-a small piece
Curry leaf-little
Fennel seed-1 teaspoon

Method:

* Wash and cut the mutton into uniform pieces.Keep a pressure pan or small cooker in the stove.
* In one teaspoon of oil add 1 tablespoon onion,little garlic(qty shown in the plate with mutton) and saute.
* Add the mutton pieces and saute for 2 minutes.Add the coriander powder and 1 spoon kuzhambu milagai thool or chilli powder.
* Put 1/2 the qty of salt needed(1 teaspoon).Pour 1 cup of water.Mix everything well.If you think your mutton is not good and will take time to cook add 1/2 cup more water.Close the cooker.Once the pressure starts coming Sim the stove and switch off after 12 minutes.
* Meantime grind the items given in'to grind'.
* Keep a sauce pan or kadai in the stove and in 2 table spoons of oil season the chukka with the items given in 'to season' and saute the ginger garlic paste, onion,tomatoes shown in the small plate.
* Now add the grounded masala and saute nicely.Open the cooker separate the mutton pieces.
* Add the gravy left into the kadai along with the remaining kuzhambu milagai thool and salt and go on stirring It will very fast become thick.
* Now add the mutton pieces and go on stirring till you get the desired consistency.(if you stop stirring,the masal will get burnt).So be careful.It will take only 5 to 10 minutes.Garnish with fresh coriander leaves.


Note: We don't like mutton much, so we are not cooking this at home. Some of my friends ask me to add mutton recipes, So I got this recipe from my friend. I will cook and post the photos soon :)
