Egg_Kurma2
Ingredients:
Eggs - 4 (boil and slice)
Egg - 1 no (uncooked)
Onion - 2 nos (half sliced)
Green chilies - 2 nos (adjust according to your taste)
Tomato - 1 no
Ginger & Garlic paste - 1 tbsp
Turmeric Powder - 1/2 tsp
Red chili powder - 1 1/2 tbsp
Chicken powder - 2 tsp
Mutton kuruma - 2 tsp
Cumin powder - a pinch
Coriander Powder - 1 tbsp
Sambar powder - 2 tsp
Tamarind water - 2 tbsp
Curry leaves - 5-6
Coriander Leaves - For garnishing
To grind:
Coconut - 2 tbsp cup
Fennel seeds - 1 tsp
Cashews - 2 tbsp
Method:
* Grind all the ingredients listed in the grind section into a thick paste and keep it aside.
* Now heat oil in a pan add cloves, cinnamon and bay leaves,cardamom and green chilli.Fry it until become G.Chilli skin got white.
* Then add 1/2 sliced onions and fry them till it becomes translucent and add ginger and garlic paste.Fry them until raw smell is gone.Add tomato and fry it well.
* Now add all the above powders. Cook till the raw smell of masala goes off and oil separates.
* Now add tamarind water and let it bring to boil.
* Then add ground paste with water. Let it cook well.Close with lid.
* Break an egg, beat it well and pour in to the curry. Stir the curry for 2 mins. Now add Curry leaves and coriander leaves.
* Then add boiled (sliced)eggs.
* Serve it hot :)

Malabar_Egg_Kuruma

Ingredients:
Eggs - 4 nos
Green chillies - 4 - 6 nos
Black cumin seeds(Shah jeera) - ½ tsp
Onions(medium) - 2 nos
Tomatoes(large) - 2 nos (small - 3 nos)
Turmeric powder - ¼ tsp
Coriander powder - ¼ tsp
Cumin(Jeerakam) powder - ¼ tsp
Kashmiri chilli powder - 1 tsp
Garam masala powder - ½ tsp
Chicken malasa powder - 1 tsp
Coriander leaves - A handful
Curry leaves - A few
Mustard seeds - 1 tsp
Salt - As reqd
Oil - As reqd
To Grind 1:
Ginger - A small piece
Garlic pods - 5 t0 7 cloves
Green Chillies - 4 nos
To Grind 2:
Grated coconut - ½ cup
cashew nuts - 8 nos
Method:
* Boil eggs, shell, make slashes all around and keep aside.
* Grind Garlic,Ginger and green chillies together. Keep it a side.
* Grind grated coconut and shah jeera till smooth, and keep aside.
* Chop onions, tomatoes and green chillies.
* Heat oil in a pan. Add cumin seeds, and turmeric powder.Add G.chiilies, fry it well
* Now add ginger,Garlic and g.chilli paste. Fry it well.
* Add onions and Fry it till transparent.
* Then, add the tomatoes and fry till pulpy.
* Add all other powders and sauté for a while.
* Now add Eggs and close with lid for 5 min. Keep stove in low flame.
* Then add the ground ingredients 2 and fry till the raw smell goes.
* Add 2 cups of water and salt, and bring to a boil.Simmer till gravy is thick.
* Sprinkle garam masala and mix gently, till flavours are well blended.
* Garnish egg korma with chopped coriander leaves.
It will goes with Rice and Chappati :)

Egg White_Mint_Corriander_Omlet
Ingredients:
Egg White - 1 cup
Onion - 1 no
Green Chilli - 2 nos
Ginder - 1 inch
Coriander leaves - 1/4 cup
Mint - 1/4 cup
Curry leaves - few
Salt - to taste
Method:
* Chopped onion and chilli. Fry it with little oil and keep it aside.
* Cut the ginger as very small and keep it aside.
* Chopped mint,coriander and curry leaves keep it aside.
* In a omlet pad, Pour Egg white and add little salt.
* Now add all the above things on top of the omlet and close with lid. Cook it for a while.
* Then turn it,allow to cook for a while in low flame.
* Serve it hot with pepper powder.

Pakarkkai/BitterGuard_Egg_Curry
Ingredients:
Pakarkkai/BitterGuard - 1 nos (Cut as small rounds)
Egg - 2 nos
Small Onion - 10 nos
Tomato - 1 no
Green chilli - 3 nos
G & G paste - 1 tbsp
Turmeric powder - 1 tsp
Chilli powder - 1 tbsp
Coriander powder - 2 tbsp
Tamarind - 1 small lemon size
Mustard - 1 tsp
Cumin seeds - 1 tsp
curry leaves - few
Salt - to taste
Oil - 1 tbsp
Method:
* Cook the pakarkkai with butter milk and water. Keep it aside.
* Soak the tamarind in hot water and extract thick pulp and keep it aside.
* Grind the onion and keep it aside.
* Grind tomato and keep it aside.
* Heat oil in a pan/kadai, splutter mustard seeds, add cumin seeds,curry leaves,Onion paste and little salt. Fry it for a while.
* Add ginger and garlic paste, fry it well
* Now add Tomato paste and fry it well.
* Then add Cooked Pakarkkai, Green chilli and Fry it for at-least 5 min.
* Then add Chilli powder,Turmeric powder, Coriander powder and fry it well.
* Then add Tamarind juice and let it boil for a while.
* Then add Egg without break Egg yolk. let it cook for 10 min.
* Then serve it hot.

Egg_Kuruma
Ingredients:
Egg - 6 nos
Onion (chopped) - 2 to 3 nos
Tomato (chopped) - 5 nos
Curry leaves - few
G & G paste - 2 tbsp
Coriander powder - 3 tbsp
Turmeric - 1/2 tsp
Red chilli powder - 1 tbsp
Oil - 2 tbsp
Salt to taste
To Grind:
Coconut - 5 tbsp
Green chilli - 5 nos
Roastedgram (Pottukadalai)- 2 tsp
Cashewnuts - 8 nos
Cardamom - 3 nos
Cinnamon - 1 inch
Cloves - 1 no
Star anise - 1 & 1/2 nos
Aniseeds (Sombu) - 1 tsp
poppy seeds - 1 tsp
To Seasoning:
Aniseeds (Sombu) - 1 tsp
Fenugreek - 1 tsp
bay leave - 2 nos
Cloves - 1
Cinnamon - 1 inch
Method:
* Boil the Egg and Cut it like lengthy wise. (as Shown in photos)
* Grind all the above ("To Grind")things together as paste.
* In a pan heat oil and add all the above sesoning items one by one.
* Then add Onion and curry leaves, Fry it for a while.
* Add G & G paste and fry it until raw small is gone.
* Then add Tomato and fry it well.
* Add Chilli powder,Coriander powder, turmeric, salt and fry it well.
* Once the raw small is gone, add 2 cups of water.
* LEt it boil. Then add Grinded paste and Cook it for 5 to 10 min.
* Then add Eggs. Garnish with Coriander leaves.
It gives smell and taste as a hotel egg gravy. It will go with Chappathi, Dosa and Rice.
